Cellulose is a non-branched plant-derived polysaccharide that serves as a structural backbone for most plants, or in other words it gives the cell wall of green plants their structural integrity and supports them. Without them they become like us humans without our bones. As humans lack the enzymes required to break cellulose down it forms a major part of the fibre in our diets.
